I had the smoker set at 140 for several hours but I never checked IT and then around a half hour-45 minutes at 155 SV

Yeah I was just thinking about doing that. I'm going to mess with the eca a little too. I started on the lower side at 1.7 grams / lb. I think next time I'm going to try 2.5 grams/lb
