    Beef rump and they have quite a thick fat cap. Not sure if it's 30%, but I'm actually making sujuk, which is normally a little less fatty than salami. We did this all in one sitting (grind/mix/stuff) and the mixture wasn't hard, nor soft. We will try adding water next time.
