    They sent four 18# bags their 4 pellet flavors for “free” so I cracked open the mesquite pellets. I tired the 0-400 method. They cooked quick. So lower and slower night give them more smoke flavor?

    Well....not the prettiest bird, but Oh My Gosh....this bird was so moist and tasted so good. I am proud of myself and everyone loved it. No comparison to the oven cooked bird. Thanks all.

    2 1/2 hours in and IT* @ 132. Any thoughts here on timing? Serve time is around 3ish. Is there gonna be a stall on this cook and/or should I slow it down? I am gonna foil it soon ( to help retain moisture?) or should I leave it unfoiled? I'd love to get that golden colored skin that Buzzard...
