I was debating the mailbox mod as it wouldn't matter what model I had. Guess i will look into the model but from research you have air restriction when using the amns in the mes.
Ive been wanting to step into ribs with this. Currently looking at spare ribs but ive seen some break done and some cook whole. I was planning a 3-2-1 but i guess a 5 hour smoke then sauce the last hour would be good.
Thanks. Ive been adding to my arsenal and it will be different stepping away from my devotion to weber. The amazen is something ive wanted for a long time and i guess this is the best time to get one as all the research ive done says the mes does great but little smoke flavor.
The mes i have is http://www.academy.com/shop/pdp/masterbuilt-40-inch-digital-electric-smoker-with-window. Thanks ill keep researching on how others use their mes.

I've looked at the amzn before to use it for cold smoking with my wsm 22. How do you suggest using the amzn in the master built? Place it on the bottom shelf?

Had a few questions for anyone that smoke bacon in a WSM 22.
1) If you go to smoke pre-sliced packaged bacon from the store what are your finish times like? I'm gauging based on the thickness it should take 1-1.5 hours to smoke some thick applewood bacon from Sams.
2) Cold smoking bacon how...
Little disappointed in my local Sams this afternoon. I was hoping to do brisket for the first time and they were out, looked at the boston butts and they had a poor selection. So the other alternative was to go to my local grocery store. However, the local grocery store had no butts and they...
Greetings and its been awhile!! I had some questions in regards to doing my first beef brisket since I have never done one before.. I was asked to smoke some BBQ for a huge party (around 30) and I decided it would be great to use the WSM 22 so I had planned a 20 hour gap between the time the...
