My 2nd smoke on a MES30 might be a 14 pound turkey for Christmas

I have cooked  Thanksgiving and Christmas dinners, for a decade, for family and clients who are staying in my small RV park and bungalows.  Plus another 20 years in Illinois before I moved to Mexico.  I can humbly say I do a pretty good bird.    The past 10 years I have used a 3 burner gas...

Curing a pork leg and then smoking it

Although my MES30 will not arrive until mid December, I am making plans. I have been studying the process of curing a leg and the smoking seems understandable.   My plan, and I hope the experts here will help me out, is to buy a pork leg early december. I plan to use TenderQuick, a 5 gallon...

    MES 30 VS ......

yes, you are correct. my friend went back to the store and looked closer in hoping to answer my questions.   The $99 was gas and the $159 was electric.    that pretty much sealed the deal for a MES30.

    MES 30 VS ......

I actually have a digital temp controller I bought for another  project.   I will need to check the amp rating but it only cost $30 or so from Amazon and came highly rated.   So if it does not draw too many watts/amps I could make an analog into a digital pretty easy. Hmmm

    MES 30 VS ......

The big hang up is the temperature control.  I really don't care how accurate it is since I will be using a couple thermometers to follow along with what project I am working on.   The question I can not seem to find is, will the smoky hollow control allow a cold smoke? does it dial down to the...

Cant smoke anything at all where I'm goin

I really think you need to bring a couple sticks along for smoking.  there will be times for stories, times for work and times to design a cheap, easy smoker to tame the wild beasts.     Good luck and good times. stay warm.

    Air conditioned cold smoker.

thanks for the help. I have been leaning towards the smoker tube for a couple months.   Although the Doctor just shakes his head when I mention bacon, there is an irresistible pull to smoke some.  may be I'll bring him some to try.

    Air conditioned cold smoker.

I have yet to do any cold smoking but it is in my future so excuse me for not understanding. From off the top of my head, cold smoking is around 80F, give or take. Am I correct?    So those of us who live in warmer climates, 60F , would work for cold smoking or am I missing something. I may...

    help to buy a smoker

both smokers look pretty nice. I have nothing to back this up but #1 looks pretty nice.  You will find the right one so let us know your final decision.   What woods are you planning to use for smoking?  Being quite a ways higher in elevation you probably have access to some woods that I can...
