Well I used the napoleon briquettes over the weekend to cook a shoulder of pork and a brisket as well as baked potatoes all in the brick smoker. The smoker itself is reasonably new and i am still experimenting with the burn rate and temperatures.

and wondered if anyone has used this before and has any guidance as to how many to light at any one time for an overnight smoke...
Thanks, i have just opened the inlet more and raised the chimney to see if this helps. I have loaded more charcoal so will take a little while for the temp to settle.

I have finally finished my brick smoker here in the UK and through my initial tests, i am unable to gain a temperature above 93c/199f. But it does stay a constant temperature for hours which is a good thing.

Well construction has moved on a bit and am now starting to render the blockwork. I tried firing up the smoker but am struggling to get a decent draw through the chimney. Thanks Wade for your guidance, i still haven't figured out how to get the draw right. Is it better to have a narrow chimney...
