Beef Back is where it's at!

Rollin some smoke this AM. Hoping to get to temp in the next hour and into the oven to stay warm for tonight. Old Country Brazos

Hang in there. People apparently make decisions to buy something they shouldn't have, and cannot wait to lose money selling it

Asking for Prayers for Myself and Family Today

My goodness, I cannot imagine. Prayers for you and the family. When King David lost his child, he said, he cannot come to me, but I will go to him. That is the hope we have in our difficult times like these.

I actually found a "used" but never even seasoned, never so much as a fire in the firebox, Brazos DLX on Facebook marketplace, and saved a ton on it. Just brought it home yesterday.

    Send Prayers: Cancer Returned

I just saw this thread. I lost my mother to cancer in 99, I've had two very mild bouts with skin cancer, MOHS surgery next month, but nothing compared to what y'all have been dealing with. Nevertheless, I believe in the all-sufficient grace of God, even in the inexplicable difficulties of the...

    Advice for an Offset Smoker

I see two ways (mods) to overcome the airflow concern on the Brazos, which has been well-documented on YouTube, addressing the same issues as the Pecos. Cut the baffle out altogether and create a difuser by pushing the heat up with a metal plate, but using holes in the plate to allow heat into...

    Advice for an Offset Smoker

I had no idea Buc-ees sold smokers; I thought they were just a gas station/convenience store. There is one coming to my area sometime, I think. I have put a deposit on a used Lyfe Tyme for dirt cheap, but the owner is out of town until the first week of May, so, In the meantime, I am smoking on...

    Advice for an Offset Smoker

That Meadow Creek seems like a great smoker for the money. I am working on a deal on a Lyfe Tyme smoker that I found, which is comparable in size to the Meadow Creek, not quite as big as the Brazos, but is in excellent condition for a really good price.

    Advice for an Offset Smoker

Ive recently discovered that G2. I watched a few videos on the value of removing that baffle with an angle grinder and extending the exhaust. The G2 does seem like a very nice offset and is in striking distance of the Brazos DLX, which, I think, does have an adjustable baffle as well. Thing...

I had never heard of Lang prior to your post. I'll look into them. At a glance, their 36" is about $2500, which pushes it into a higher level than I think I want to pay. Interesting looking design, thanks for pointing that brand out.

    Advice for an Offset Smoker

I've been using a Masterbuilt Gravity smoker for the past 4 years. I have enjoyed some great food, but it's day seems to have come. I nearly burned it to the ground. The control board went out, the replacement doesn't read the temp to control the fan, and I really can't see investing $350-$400...
