    What a great question. I've wondered about it too. In fact my thermometer that I installed onto my smoker has 2 sections on it. One is smoking--100-275 degrees and then bbq 275 and above. I also saw on one other "BBQ" site that they claim that you can't "Q" unless you are using hot wood coals...

    Rolling a fatty?

    I had the same problem rolling them too. Now what I do is press out a little gulley in the middle of the sausage roll....kinda like making a canoe in it. Then I just put the filling in it and seal it back up.

    Great idea doing the apples. Maybe slace them up and cooking them a little in some brown sugar then stuff it in the sausage once it cools.
