I have a 12" A-MAZE-N oval tube, I just fill it up with pellets straight from my buckets. I light it and let it burn the prescribed 10 minutes, then blow out the flame. It smokes a good 4 hours and has never went out. I have a Pit Boss 700 Classic and put the tube on the right side of the grill.

I haven't used my sear option yet, but I'm getting great results on low and slow smoking. I have a pretty stout pair of tongs that I have no doubt will be able to slide that cover over. That's a great idea though.
I'd say your ribs look good. We do a lot of squash on the grill as well. Never thought about the stuffed mushrooms though. I'll have to try that one weekend.
