    What meat is the best for jerky?

    Deer.   Cant beat deer IMO.  My bro in law made the best deer jerky in the world, until he upgraded to a jerky gun last year and I can't stand it anymore.  That is something I want to start on trying to do with my smoker.

    11# Turkey done fast

    I have done 2 3.5 pound turkey breasts in about 2.5 to 3 hours.  They were both very good and well done.  I done one in a wet brine and one in a dry brine for 24 hours.  I will attempt at whole turkey next Wednesday.

    Beef jerky take one

    I seen Alton Brown's way of making jerky and think I may try that sometime. 5 air conditioner filters and attaching them to a box fan with a bungee cord.
