I have done this several times, in fact will be doing it again tonight to speed up 42 pounds of shoulder, and had great results. You should be just fine.
You will be fine if you put in the oven wrapped in foil. I have done a few shoulders this way for potlucks at work so I could get enough sleep to still function at the office the next day.
1st dog is about 6 years old, name is Buddy, he is a siberian husky rescued from the local kennel.
2nd dog is about 1.5 years old, name is Kahlua, she is some sort of mix that we are not sure of, rescued from a family that was going to take her to a kennel at 8 weeks old.
As I sit here in 70 degree weather with the sun out, I envy you guys with snow. I am originally from Michigan and have missed the snow ever since I moved.
Sorry was not able to get pics of the final product, but here is a pic I finally was able to get the quantity of pork that was made.
