    Sunday's Smoke

My largest smoke to date but small compared to the pros here. Did a 9lb picnic which I pulled and finished with SoFla's finishing sauce, a big brined roaster on a throne done with "wild willys number one-derful" rub, my first batch of ABTs which were a big hit with the kids, and since the grill...

    Hamburgers

We had some friends over Saturday and I did a couple beer-butt birds and some burgers, half of which I wrapped in bacon. They were delicious but since the burgers cook pretty quick (~1 hr) the bacon didt crisp up as well as I would have liked.

    07 april/may/june

A life long avowed atheist was hiking through the woods and heard a noise in the bushes. Curious, the atheist quietly moves through the bushes and startles a huge grizzly bear eating some berries. The atheist screams, turns and runs. After some yards, he turns and is horrified to see the bear...

    1st smoke on the gosm

I have the 20" wide GOSM which has the small firebox. I also was concerned that the smoke seemed to stop after 30-40 minutes. Now, for long smokes, I use an old cast iron fry pan instead of the firebox. It holds more wood and is much easier to handle and add to. Throw in some wood chips and 2-3...

    SMF Gathering Trubute Smoke

A little late in posting. In honor of the SMF gathering, I smoked a couple racks of spares (my first) Fathers day weekend. Did St.Louis cut, coated with mustard and rubbed 1 rack with Meowy's and 1 with a Memphis style rub. Did the 3-2-1 method and finished with SoFla mustard sauce or honey BBQ...

    Droopys in the House!

Ok Ill adjust my grade to a B-. We had pork BBQ sandwiches tonight and they were very good. Could have been a little more spicy but the kids asked to take it for lunch so it was pretty good. Of course my kids are unusual in that those 2 will eat just about anything if they can get a fork in it...

    Jimmy Dean "fatty" clone recipes

MSG is Mono Sodium Glutamate. Its a salt, like mono sodium chloride or table salt. It has gotten a bad name becuz some people are allergic but more so becuz of the too high levels of sodium in our diets, from all sources. It tends to be used at higher concentrations than regular salt. However...

    Droopys in the House!

<I agree that you are way to hard on yourself with the C+,,, Well thanks for the kind words. The C+ is a composite score. I would have scored higher based on taste alone but the darn technical half brought me down

    Droopys in the House!

Warning, long post. Hello again. Now for the first smoke report. I got a shoulder picnic and a couple small chickens from BJs. Saturday night I brined one chix using DeeJays recipe and trimmed the pork to what I thought was about 1/4" fat cap. Then added Meowy's rub, wrapped in plastic and...
