    I'm not using any water and I'm using a AMZN smoke generator.  I'll try preheating the smoker to 200 before I get smoking to dry it out.  I know people say not to smoke out in the rain, but I don't have much of a choice most of the time.  Thanks for the advice. Nick

    Decided I would give summer sausage a shot after seeing some of the posts on here.  I tried it with a 65/35 mix, (venison/pork shoulder) + a 10 oz block of sharp cheddar and a "spicy garlic" mix I got for xmas...I took some of it to work and it seemed to go over pretty well :)

    First attempt at snack sticks

    Thanks for the responses guys! What grind plate do you use for snack sticks?  I think my next project is going to be summer sausage....I've got a lot of deer meat to practice on (we get 4 a year here)...
