I took several temperature readings just to be sure. I took it from the middle (top down), in the side (at the end) and only into the top layer of the meat. I moved my fatty closer to the heat (off set smoker) for about 20 min when I thought it was done just to be sure.
This is my second smoke and after reading here I had to try some fatties! I'm not a huge fan of sausage so I opted for beef fatties. Went with traditional styles.
Mushroom gravy with mushrooms and swiss..
Mustard, ketchup, cheddar, pickle and onion..
Roll em up
Rolled em in the bacon...
