Hello, I am stumped on how to smoke a Kingfish. I hear that a brine is the best way, however, I don't know what time, and temp, and for how long. Can anyone help? I think a fruit wood to add, but I am not sure.
I have 2 racks of ribs and 6.5 pounds of chicken wings. I'd like to smoke them all at once, knowing the ribs will take longer. Any advice is appreciated. Planning to have these ready around 7 pm today, before the festivities and the fight tonight.I want simple. Thanks in advance!
