I just got a BGE for Christmas. I did a couple pork butts the other day and only opened it to insert thermometer probes. In my opinion the bark ended up great with mops or anything else.
The Big Green Egg is the real deal. I love that thing.
Big Green Eggs are terrible and you will want to get rid of it as soon as possible. Now I really care about you so I will help you get rid of it. Just ship it to my place and I will dispose of it properly, for your sake.
That is exactly how I do it as well. It usually takes me about 2 hours with a full loin. Maybe a little less. The pork is very juicy and tastes great. I usually wrap it in foil and let it rest for 45 minutes or so before I slice it.
He's giving it to me to try out. My dad is a cabinet maker, and is doing his house. He thought he would give this one to me to see what I could do with it, and if it's good he'd have me smoke one for a "new kitchen party" when Dad is done. I don't think he cares about the ham flavor, just...
What if I didn't brine it, but just smoked it more like a picnic, but with more basting and only went up to 160 or so since it's leaner? I know it won't taste like ham and I will need to slice instead of pull... but will it taste like a picnic?
My dad has a farmer friend that heard I have a smoker, so he gave him a fresh ham for me to smoke. I have read up a bit on how to cure a ham... and that seems like way too long of a process.
What will happen if I just smoke it without the curing process? Will it taste ok or is it just a...
I have the Chargriller pro with a couple mods and it works pretty well. It's my first one. I plugged some holes by the smoker box, did the dryer vent trick, and flipped the charcoal bed but it's pretty much ready to go right away. I threw my extra grates under the charcoal bed to try to hold...
I have the Chargriller pro. I have done the dryer vent mod, flipped teh charcoal tray to use as a baffle, and added an expandable rack in the firebox. Totaled like $40 of mods. Great smoker for the money.
I did four the other day, and only had 3 stands. The fourth one was a little bit more of a pain, but it worked just fine. I used a potato to "cap" the neck, and put some chives in the beer. When you get ready to do it, make sure you have more than one beer handy, it might take 3-4 to get it...
How hot do you want a smoked butt to get? I haven't done one yet, just had my first smoke of anything this last weekend.... and I can't wait for my next
I did a beer butt chicken this weekend and used an apple to plug the top of the chicken. I don't know how much good it did, but it looked cool, and tasted great!
