    Blackened Catfish Po-Boy

Mmmm!  I almost bought some halibut, but the store only had this giant slab of it.  I'll have to remember that for the future, thanks!

    Shrimp on Easter Eve...

I figured I'd end up eating way to much ham on Easter, so I treated myself to some shrimp tacos on Saturday.

Smoke Hollow Pro Smoker Deluxe Barrel Grill?

Hi, I actually didn't see this reply until now.  It does help.  I didn't end up getting one, but now I know when I want to move to offset, I can safely go this route.  Thanks! -Dan

    Turned my Brisket into Chili

Thanks guys! Doug - let me know how it turns out!  I know you'll LOVE it.  BTW, on the ingredients list, I put a range on the spices.  I took the upper limits of them.  I will also warn, 6-7 chili peppers makes it REALLY hot.  Cutting down to 4 kept the heat, but more balance. Enjoy! -Dan

Thanks!  I am newly created fan of it.  I was playing around trying to find an edge for the church cookoff when it hit me :)  Mmmmm

    Turned my Brisket into Chili

Thought I'd share this... it was a huge hit at the office today.  I did a brisket cook over the weekend, and turned a bit of it into chili for the Church cook off.  After that I made more to share at work. Turned out really good.  Enjoy, a link to my web site has the list of ingredients and how...

    Prime Rib from the weekend

Very cool, thanks!  I had completely forgotten about the Au Jus until I was ready to eat :)  Also, the last time I tried to make Au Jus, it didn't end well.  The drain was fuller.  I am going to give this one a whlrl.  Thanks! -Dan

    Prime Rib from the weekend

Howdy Folks! Thanks for all the mix ideas!  I'll have to try these as I cook prime rib again.  Interesting to see the different combinations.  I use to just buy Montreal seasoning, then I went to just S/P, but now I'm in experiment mode.  :)  Appreciate the compliments as well!

    Prime Rib from the weekend

Thanks!  I'll have to try that one sometime. Bill - normally I do a s/p as well.  Something to be said about letting the natural flavor come out :)

    Prime Rib from the weekend

Thanks!  I think Rub was the wrong word.  LOL Meant Seasoning.  I normally do s/p myself, but was trying a variation from a montreal, then it went weird.  Tasted good though.

Chicken cook from the weekend w/qview

Thanks guys!  My wife asked me to make another one tonight.  lol  I'm going to take Chef Jimmy's advice and inject it as well.  I'll follow up later with how that changed it.  I would think it should sweeten it up more. -Dan
