Hi,
I actually didn't see this reply until now. It does help. I didn't end up getting one, but now I know when I want to move to offset, I can safely go this route.
Thanks!

Thanks guys!
Doug - let me know how it turns out! I know you'll LOVE it.
BTW, on the ingredients list, I put a range on the spices. I took the upper limits of them. I will also warn, 6-7 chili peppers makes it REALLY hot. Cutting down to 4 kept the heat, but more balance.

Thought I'd share this... it was a huge hit at the office today. I did a brisket cook over the weekend, and turned a bit of it into chili for the Church cook off. After that I made more to share at work. Turned out really good. Enjoy, a link to my web site has the list of ingredients and how...

Thanks guys! My wife asked me to make another one tonight. lol I'm going to take Chef Jimmy's advice and inject it as well. I'll follow up later with how that changed it. I would think it should sweeten it up more.

Thanks everyone! Sorry for not responding sooner... busy busy...
Pineapple/sweeter - Not really actually. Not on mine at least. It might be I don't soak it for any real amount of time, so I think it just ads a nice moisture to it.
WSM - thanks for the tip! I'm going to try that. I've...
Finally getting around to posting my weekend pics and video... I did a spin on the beer can chicken. I love this stuff. Let's see if I can get a video linked in first try
Ah, a video link icon. :D
And a quick pic:
Wow, I love this forum's setup. Pic size, video links... nice job...
