You need more practice! Keep it up and send me all your finished product so I can do proper quality control for you. The cheddar and almonds were fantastic! I can't wait to try the pepperjack!
This is pretty subjective. It all depends on what type of smoking you do (and what your fuel preference might be). The big thing is do your homework, decide what you think will work best for your needs. (Do some "what if" thinking if you think there are some areas you might like to try). Go...
Well, if you can't have a smoker like this one, maybe you're getting lumps of coal in your stocking. You would have fuel for your next smoke.
This Christmas, set out ribs and beer instead of cookies and milk. That's been know to change Santa's mind about these things........
Thanks, Steve. After using it on the maiden run, there is a learning curve. I had the air inlets open too much which exaggerated the hot/cold spots within the grill. It's definitely not the same as using my charcoal grill. I cooked burgers (with JD Steak seasoning), boneless pork loin chops...

Above is the link to the entire album devoted to my brother's smoker trailer. Last week he made an addition to compliment the smoker. It is a two-burner propane grill. This allows him some flexibility to what he is able to serve and do when...

What CAN'T one do with bacon??

It's a nice way to chase away the chill of a sub-freezing morning!
You drove all the way over to my town today.....AND YOU DIDN'T EVEN BRING ME ONE!!!!
I hope you caught the cheese that run out.
Looks great. Lucky friends.......
Will Adam may just learn to cook yet!
The strapping is rather thin, so it molds to the door's form easily. IIRC, he put a temporary handle on the door and welded a piece of angle iron on the bottom of the door to keep it flush (perhaps just a little below flush) with the smoker body. He then welded the top strap in place, fitting...
Here are two pics of how my brother did it on the "Legend". It works very well. If you notice, they are only tacked in several places and don't have a solid weld. A solid weld might cause warpage. It is important that the doors are fitted properly before the strapping is welded together. ...
It's as much about having the proper tools and techniques to do the work as it is finding a "trick".
Use thick 3/16" to 3/8", quality metal to keep warping to a minimumUse the least amount of heat you need to make your cuts. Plasma cutters use the least, well-tuned torches next, cutting...
