Now that's a heck of a way to break in a new smoker and AMNPS! Definitely a herculean effort. Congrats on a great smokin' job! Never to much Qview, but it kept going and going and going. haha Gotta admit I started to drool too. lol I'm sure everyone left with a full belly and pleased palate. -

LOL I had a thread the year before last I think it was when I had one that went 22 or 23 hours! Kind of killed the buzz needless to say! I tried 3 different times to do a butt without foiling at 225 and each time I ran into marathon cooks. -

First Smoke on WSM 18.5 BB Ribs
Congrats on the new smoker! The ribs looked pretty good to. For me the 2 hours in foil is way to long. For BBs I usually go 2.5, 1 in foil (depending on thickness if thick I may go 1.5) and back in for an hour to firm things back up. -

Looking good. I don't spritz anymore but when I foil I use a 50/50 mix of apple juice and cider vinegar. Keep it up, you'll have the drum dialed in, in no time! -

Most likely it was removed during processing. Once in a while ya get lucky and pick up a rack like that. For me though the BBs always peels right off normally all in one piece...the one that gives me the hardest time is on spares. When you smoke'em up, you'll know if it's there or not. Ever...
