    Nice metal work! I opted for stainless steel shelves in my Lang 36 ,the nice thing about reverse flow is when your done cooking you can spray the inside with a hose to steam clean the interior racks!

    Dave I have a Lang 36 patio reverse flow and it is excellent .You might want to add a damper to the chimney and a pinwheel damper on opposite sides of the fire box,this will allow you better control of the temperature in the cook area by closing down and adjusting the air flow around the meat...

    I originally used the high temp felt to seal the fire box but it burned up!! The Rutland seal calk did the job for me on sealing the gaps on the fire box door, I also caulked the opening between the firebox and the unit itself, no leaks!!

    Yes Im pretty sure the butt could've been sliced with a really sharp knife,it was extremely juicey but still had some body to it.I shredded the roast with a couple of forks and poured the hot juice from the pan on top.
