I'm doing about 15# of brats when I find the right mix. Probably doing some regular and some with a dark beer in it.
What about a summer sausage like a jalopeño cheddar?
You must have heard right! I ditched the mic Jack and ran the TC directly to the PID and it solved my problem it still isn't perfect but I can live with it for now.
Ours ended the first week of January .
My wife has a marinade for backstraps that is awesome! I will see if she has it wrote down and share it with you. Congrats on the kill.
I installed an element in my wood smoker hut i have it up off the bottom so that i can redirect the drippings around the element and it drains out the bottom.
Hey Saint, how was the willies seasoning? I tried the snack stick seasoning from ac legs ... it was good but way too salty for me. The best one ive found so far is the backwoods. Seasoning. I just wish i could figure out their ingredients and then reduce the salt. Lol
I know what you mean there. Ive been cleaning my own since 1987. Last year i heard some guys raving about a guy's jalopeno cheddar brats and summer sausage. So the Saturday of Thanksgiving i killed a 110# doe and had to be home by noon to help the wife. I ran it by this guy and got 10# of brats...

Like fajitapot said....wrap the butt in foil and place it in a small cooler. Then when you are ready, take it out and pull it.
My hunt club does a funraiser every year and that's what we do. Wrap in foil and place in a cooler for pick up. Works great!
