    Anyone for Deer Bratwurst?

Thanks.  I'll know to cook lower and slower for next time.  First time.....was guessing. On these, I used a brat seasoning pack I got from Cabelas (Cabelas brand).  Mixed up 10 lbs of ground venison in a large bowl with the seasoning, bit of olive oil, and third cup of liquid bacon grease...

    Anyone for Deer Bratwurst?

Took about 1:40 at 225 degrees to hit 160.  Smoked the whole time.  Didn't foil.  Smells great!

    Pronghorn Antelope Roast

As a note, I cooked at 230 degrees and it took roughly 4.5 hours. Also, I put apple cider in the water tray.  It turned out really well.

    Pronghorn Antelope Roast

After foiling, I forgot about it.  Didn't get it out until it was at 170.  So a bit overdone, but don't think I hurt it.  VERY juicy.

    Pronghorn Antelope Roast

Got it, and subsequently bought the slow / cold smoker box on Amazon. Cooking my first set of baby back ribs and baked potatoes as I...
