Thanks. Temp quickly recovered and got back up to 200. You can see the temp variation in the last dip below (blue):

    Pork Butt Stall? Sliding Temps

Currently cooking two butts for a get together this weekend. One of my (calibrated) thermometers was reading a temp of 190 before quickly falling down to 177. I’ve seen cooks in the past go backward but never this fast or this drastic. Is this stall related? MES electric smoker at 270.

    Pulled Pork + Football

Yes I think it all comes down to personal preference. I love having a little “crunch” with my pulled pork, as does the wife. I decided not wrap this one and smoke till the end. No sugar on this one. I try and keep my cooks “Whole30”, so this was spritzing with apple cider vinegar

    Pulled Pork + Football

Thanks @sandyut & @Jabiru. This one was simple: mustard, salt (pink Himalayan salt is my preferred), and coarse ground black pepper. I’ve been reading up on Aaron Franklin’s method and decided to give it a try. Today was my first smoke with no water in the pan and cooking hot and fast at 270...

    Pulled Pork + Football

Started a butt this AM at 6, and just took off the smoker in time for watching some football with friends. Letting it rest now before I pull- I’m very pleased with this one and can’t wait to dig in. Cooked on my MES w/pellet maze. PID held at 270 throughout the entire cook. A big thanks to the...

Planning first overnight smoke w/ COLD temps

I'm planning my first pork butt overnight smoke this Friday night in my masterbuilt. I'll be using my pellet maze as well as Auber to control temp- temps right now look like they will get down to right above freezing. Is there a cause for concern with such low temps? The one thing that I can...

Bone-In, Skin On Breast Smoke (help needed)

This is one of my wife’s and I’s favorite piece of chicken to grill, and this weekend we are going to try to smoke some. I’ve never smoked chicken but I’ve seen enough threads here to understand this is a different type of smoke compared to pork, etc. What suggestions do you have? Wood choice...

Thanks @dr k. I completed the rewire, hooked up the Auber, and ran a test drive. Everything is working as it should!

MES Rewire Simple Guide - No Back Removal Needed!!!

@tallbm I am working on my rewire this morning. Pic below is what I am working with. I’m trying to match my wires to yours from your walkthrough (which has been very helpful!). I have only removed the black smooth wire and red braided wire so far. These were connected to the black plug (black...

Little help choosing Auber for the inept

@sm0kin I think I'm about to pull the trigger on the Wifi model to replace my current "hybrid" grilleye thermometer (aka NO range) and I was just wondering if anything has been addressed from Auber since your original review (below)? Also, any update on the alarm from the controller being super...

    Aubrey PID w/ WIFI reviews

Im about to purchase a PID for my mes and intrigued by the WiFi model (WSD1500HW). Does anyone have experience with this controller? Is it worth the extra cost? I have a “hybrid” Bluetooth/WiFi thermometer that will not work if I’m sitting inside the house (not even 10 yards away). Does this...

MES Rewire Simple Guide - No Back Removal Needed!!!

@tallbm I’m hoping you can help me with my wire situation. I have a newer gen smoker and after removing 6 screws (it’s like they made it easier on this gen to access the wiring because they knew it would need to be accessed in the future) I’m faced with the pic below. It looks as like all wires...
