    Cold Smoked Pork Skin Question

    Cold smoked a 15 lb. Pork Belly on Friday with an Amaze-N- Pellet Smoker in my XL BGE. I've got about 2 lb. of cold smoked skin.     Right back at smoking temp. --about 220 to 225 if i have the time. If not, up as far as 325, but watch your temps carefully with a good thermometer. I let brisket go to about 190 deg.

I draw the line on thunderstorms, though, since two years ago my next door neighbor was hit by lightening in my yard (we're on the top of a hill). Wasn't pretty.
