    Beef, it's what's for dinner...

Thanks y'all! Merv, I work 3rd shift and didn't go to bed that morning. I stayed up all day, so I was pretty tired.

    Canning jars questions

I check Craigslist daily, in several sections for different things. I have never seen jars on there. I always look at these sections: auto parts, free, barter, general, household, farm/garden, electronics, materials, sporting, wanted, and tools. I will buy them new to start with I guess. I...

It was some good eating, Al. Gonna eat some more tonight too! Taking some to work tonight, for more tonight! Thanks Bear!

Thanks for the comp! Easier to shred to me. Plus I don't eat fat, so I remove all the fat as I am shredding it. Most places around here just chop up the point, fat and all. They call it chopped beef. I haven't seen burnt ends anywhere local to me.

Here is the q-view! I tried to slice the flat, but it kept coming apart, so I shredded it all. I ended up not doing burnt ends. I was too tired.

We ate most of the ribs. I could hardly carve them up. Kept falling off the bones. I got pics though! Will post them tomorrow with the brisket pics.

...tomorrow anyway. I just got the brisket, a slab of baby backs, and a fatty on the smoker. Feeding mesquite wood into the fire as needed. I did something different this time. I separated the flat from the point. Gonna make some burnt ends.    Q-view tomorrow! Will take pics of the ribs...

    Canning jars questions

I will probably go with the Kerr, since they have the wide mouth quart jars in stock local. Be a lot easier to get them peppers out when I want some. I saw the spot on the shelf for the Ball Blue Book, but they were sold out. Only like $5 for it.

    Canning jars questions

They are ~$10 for 12 here, with lids and rings. That is the quart size. Pints are a little cheaper I believe. That is less than a dollar per jar, lid, and ring. I'll probably go with the Kerr, since they have the wide mouth. They are $10.44/12. Regular mouth is $9.67 or so.

    Canning jars questions

I won't be storing any in the freezer. I have an extra room that we don't use, that has shelves on one wall. I thought about making shelves on all the walls and making it a store room for food.

    Canning jars questions

I was looking at canning jars, since I want to get into canning this year. I was at Wal-Mart the other day and looked at what they have. They have Better Homes & Gardens jars, Kerr (I believe that it the name), and of course Main Stays (their brand). Which one would be the best to use? As far as...

Brisket - Using Advice from SMF (w Q-View)

That looks great for your first time! I smoke my briskets fat side down. I don't trim any fat off before smoking it. I am going to experiment with my next brisket. I have a 10-lb'er and a rack of baby backs in the fridge for next Saturday (if I don't decide to smoke it today). Also have a fatty...
