Could I still use a vinegar based sauce after this or would that be too much? I really like using the one in this video but I don't want it to be overpowering.
This is probably a dumb question, but I just got 4 butts in the 5.5 - 6.5lb range to smoke tomorrow for a little get together. Every other time I’ve done butts they were much larger (9-11lb) but the store didn’t have much of a selection this time.

We actually picked it up about a month ago. We've done a few smaller cooks so far. A couple racks of spares, some sausages, some mac and cheese. Still getting use to her.
