    Brisket flat.

    Hi, smoked my first brisket flat today, smoked it to 155 then wrapped it in paper and tallow and smoked it to 203. Rested wrapped in my over for 4 hours at 155. It was tender but dry. Any recommendations to improve my brisket game are greatly appreciated. thanks!
