    It is as good as it looks. Great smoke flavor. The Traeger beef rub is very savory. The meat is juicy and tender. Next time I'm definitely going with unsalted stock. This isn't bad but less salt wouldn't hurt.

    Pulled them off PB after almost 3 hours. Internal was between 150-155. Squeezed them both into a half pan. Added 2 cups of beef stock, foiled and into oven at 250. Shooting for IT of 200 or soft probe. Attached Files:

    Extended hold time on tri tip

    I reverse sear my tritips and wrap to rest. I have monitored internal temp while wrapped and have seen @10 degree increase at most. I try to wrap mine @125-130. I have let them sit for 2-3 hours and temp decreases after 45-50 minutes.

    1st run of AMNPS in Pit-Boss 820 Pro

    Tonight I cooked 4 chicken quarters in my PB and used a AMNTS for the 1st time. I set the tube in the rear and elevated the open end with a coat hanger.
