Welcome. You have a very good start to your list. I might add Yoder as another USA made choice. Shipping is pricey for smokers so hopefully there is a dealer near you. I wouldn't worry too much about cold smoke. Throw in a pellet tube or tray and you'll be set.
I'm sure they're several ways to boost it up. Add some legs or possibly a metal stand/table that you might have laying around. Here is another idea:

We only go the fast food route when we have to. When the bill for the 4 of us is $50+ I think about the tasty steaks I could have made at home for much cheaper.

Great looking booth. Nice job restoring those Griswold pans. Do you have a preferred method and oil that you'd like to share? I agree the old pans are excellent.
