My oldest nephew is a LA County firefighter. He lived in Idaho and recently moved to TN. Yes he flies to LA weekly to work.
Before they left Idaho he shot a huge elk to add to his other hunts.
I did get 25lbs of elk and venison from him.
FMF Mix. 400g hard red and 100g hard white.
1 hour autolyse no starter or salt yet.
Will mix in 10g kosher salt and 100g fmf starter.
I put the salt on top of the cover so I dont forget it....Yikes.

All the vids say to pre heat for 45 mins, they aint kidding.
