    That all looks fantastic. I'm a big fan of back bacon and I'm sure you will be too once you've made your own as well. I never thought to make snack sticks out of ground ham, but I have one thawing right now to go into the cure tomorrow so I'm definitely going to try that. Good stuff.

    Nice knives. I only have one Dalstrong, a 10-inch breaking knife that was a gift. I like it a lot and it holds an edge better than my Wusthofs.

    Calibrating Inkbird Humidity Controller.

    I had to calibrate my new Inkbird humidity controller right out of the box as well. It was off by 13% so I put the sensor in a jar of rice overnight and that closed the gap a little. It may be worth a shot.
