That all looks fantastic. I'm a big fan of back bacon and I'm sure you will be too once you've made your own as well. I never thought to make snack sticks out of ground ham, but I have one thawing right now to go into the cure tomorrow so I'm definitely going to try that. Good stuff.
I can totally relate. I'm a self taught cook with a food service trailer that I take to a few festivals a year in the summer, so I have no business owning the Wusthof knives that I have. But, for the most part, I do the majority of my cooking at home and the knives that I use in my rig are...
Sweet Christ! You can lop the leg off a swine in on fell swoop with that sumbitch. Tell you what...if you need a job done that requires something of that caliber, save yourself some money and pick up a briar axe for like 40 bucks. That way you could cut your brontosaurus steaks then head out...

I should have been more clear. I no longer operate the business but kept my rig (it's a trailer) and plan to outfit it for personal use. I'm in the process of removing the fryer and flat top and putting a smoker under the hood. There is also a curing chamber and a small cold smoker that I...
I read somewhere that putting the sensor in rice would remove residual moisture (kind of like back in the day when you dropped your cell phone in the toilet). I tried it, put the sensor back in the chamber the next day and I only had to compensate by around 4% when I calibrated the unit against...
Hey everyone,
I'm new to the forum and am from the Northeastern US. I previously operated a food truck and have recently began curing, smoking an drying meats. I am in the process of converting my mobile kitchen into a processing/curing/smoking/drying rig and I am interested in reading about...
I had to calibrate my new Inkbird humidity controller right out of the box as well. It was off by 13% so I put the sensor in a jar of rice overnight and that closed the gap a little. It may be worth a shot.
