Hello family, i know i have been gone for a while but i have good reason. BUSINESS HAS BEEN GREAT. I even had to upgrade to a bigger smoker to accommodate the bbq lovers of Palatka. Its a 500 gallon monster that will hold about 75 slabs of ribs. Here she goes.
Hello family, I'm posting my first qview today. I'm cooking 18 slabs of ribs and 24 half chickens. How long should i cook the chicken if I'm cooking over an open fire at 225 degrees. I'm postings pics when everything comes off .
Can somebody help me. My smoker does not cook evenly or get hot enough to steam clean. Does anybody make propane or water tank smokers that could give me step by step directions so i would know what needs to be changed.
The rub turned out to be very yummie. It gave my ribs and chicken a nice reddish tint after spraying with apple juice. Alot of my family complamented me on my bbq sauce until i told them there was no sauce on them just rub. Now i need to make a bbq sauce off my own.
Hello Family, i finally made my first rub. I was bored in the kitchen the other day an had more spices then i needed so i thought i would give it a swing.

2 tsp celery salt

1 tsp onion powder

Hello family. I've been kinda down in the dumps over my green wood situation. I'm still unsure about what i should use as heat source for my smoker. I have a big firebox so i need a good amount of heat. Any suggestions.
