I tried Hickory - ( LJ and Cooking Pellets ) and did not get enough smoke. I don't wrap or spritz, but I think the idea of cutting into two pieces to get more surface area to absorb the smoke is a good one. As to the Ubolt and dust, I thought I read that dust gives a more gentle smoke...

A friend just brought over some St. Louis Rib Portions for me to smoke in my MES. I have smoked plenty of St. Louis ribs before, but these are "portions" about 2 1/2 inch wide - do they cook faster than regular St. Louis Ribs? Just trying to get an idea of when to put them on the smoker...
I don't have the Rex, but have a Mypin for my Masterbuilt and a Twidec that I use on a countertop oven. I have used autotune on both, and they seem to work okay. I am no expert but understand that when using Autotune, you want the smoker to be similar to how you will use it in cooking...
Jack, no fair, that was going to be my question. As I understand it, the controller just slides off, so you have two smooth ends, and I didn't see how you would attach leads to it?
Can you post some info on the element - what the model number is and where you got it. I was modding a counter top oven recently and was looking for an element just like that, and could not find it. It looks like it will give more even heat through the box.
Just wanted to thank Tallbm. My MES 40 Gen 1 died at the end ( well almost the end ) of a long session cooking pork butts, noticed the temp kept falling though my PID was calling for heat. Opened it up and the insulation around the cover for the thermal safety switch was charred, and opened...

Mine had a similar problem, I thought it was the controller, so i wired a PID , still popped the GFCI, so I replaced the element, problem solved. Hope it works for you.
