    Hiding in plain sight

I had a high school friend take his life. I stupidly thought that the worries of that ended now that we reached 50. I retired from the Army and I can't tell you how many times I've been thru suicide training and it was right in front of me. It's been a few years now and I'm still mad at...

    Sunday Gravy and Pasta

That's pretty close to the recipe I got from my Italian uncle (not blood related). I was always amazed at how simple it was. I've made it so many times throughout the years. I started ordering these off amazon b/c we go to a little italian place every year in NC that has amazing food...

Transporting smokers and gear - Anyone using a small cargo trailer?

My opinion is get the largest one you are okay with having enough room to park. The cost difference from the next higher one you mentioned can't be that much more so it would be good in case you end up like the rest of us with multiple toys to cook on or if you want to add other stuff etc etc.

Do you leave your pellet grill plugged in?

I unplug mine unless I get too many adult sodas in me but then I unplug the next day. I got an electrician to install an extra 4 plug box about chest height where I keep the smoker. It's just not worth the risk of lightning frying something up.

In the market for a new smoker. Any recommendations?

I'm team RecTeq all the way. There are a wide variety depending on budget and their customer service is the best I've ever seen. If you are concerned about smoke, you can amazon a smoke tube for $10 that will add smoke and most smokers have a low heavy smoke setting. The two things I like...

First cook on the Recteq beast.

I love my RT flagship. I still have a stick burner I will use when time permits or if I want to change it up but I've been using the hell out of my RT. The only thing I will add is you can amazon a smoke tube very cheap if you want to add some smoke flavor. I don't always use it but just...

    Sauce pairings for pulled lamb?

Vote #3 for chimichurri In fact, I would even marinate it in some sort of olive oil herb Mediterranean type goodness.

    Beer can chicken

What I would give for a set up with a rotisserie over a fire. I have a weber rotisserie set up and haven't done it in a long time. I need to bust that out!

Remembering Those That Have Left Us!!

I really like how someone has gone and put Gone but not forgotten in their avatar. If I remember Bear was the king of prime rib. I've tried his recipes so many times and still can't get it quite like he does!

Pulled the trigger on a pellet grill

Love my pellet grill. To me the best thing about it is being able to get a lot better skin no chicken. I like to do 1hr of low smoke on any poultry with bones and then crank it to 310 until finished. Sometimes I wont even do the low smoke. Also if you find you want extra smoke flavor, you...
