Sliders on the drum
I usually make sliders in the house but wanted to try a batch on the drum.
When I make these in the house, I just brown the burger and spoon it onto a bun instead of forming...
In the picture it looks like your vent stacks are completely closed off....I would recommend opening them FULL OPEN....and adjusting your firebox air intakes to control temp.
I may get hammered for this, but try using a small bag of lump charcoal first to test out controlling temps and getting...
The guy I got it from was a class guy. he had blasted it and repainted. then bought a new wood grate and all new handles.
I've got a brisket and 3 racks of baby backs ready to go this coming friday when I finish my set of days and go off on 7 days off.
Tejas smokers are quality smokers. Heavy duty and fairly easy to control temp in....even with lump charcoal as your main heat source.
If ya have to pay more than 50% of new price....then I would have to really consider my cost and probably pass and get EXACTLY what I wanted new.

12 lb. brisket on @ 3:30 should be ready to foil in another hour or so. Trying to decide whether to finish on pit or oven overnight.

we were a lot more patient as kids.....
we took spokes out of bicycle rims and put gunpowder in the hollow then packed a BB on top of the powder and used a small benzene torch to fire our spoke guns at each other.
I still have a BB lodged in my left knee.
It's a wonder we made it out alive.
Can I put this in a pork loin and leave it in DURING cooking?
Sorry for the dumb question, but I am cooking at work in an oven and don't want to dry out a perfectly good pork loin.

Just by chance, I would check my Thermometer for accuracy. Possibly it didn't actually get up to 190* or 195*.
I have had to adjust mine in the past and or get new ones. On the larger 3" dial thermometers there is a setting screw on the backside to adjust. And on some of the small 1" diameter...
Couldn't you just put a wood tray on top of the regular heating element and be able to use all the normal control knobs for temp.
Seems like adding a stack with a adjustable vent of some sort would help with the air flow. Might have to add a few holes some where close to the bottom of the...
