    Hobart 110 Meat Slicer

I have a Hobart 110 Meat Slicer I picked up at an auction.  As best I can tell it was built in the late 30's early 40's.  Mechanically it appears to be in good condition.  It has a working sharpener, and the blade appears to be in good condition other than a few minor dings less than 1/20th of...

    In need of help; PLEASE

This will get you started:  http://makeprojects.com/Project/Clay+Pot+Smoker/877/1 Alton Brown (of Food Network fame) built one very successfully for very little money.  This could get you up and running pretty quickly.

    how "hot" are ABT's?

It is actually a version of this:  http://allrecipes.com/recipe/sausage-stuffed-jalapenos/ As far as the number of jalepenos, I would guess about 20-25 depending on size.  The recipe above calls for 1lb. of peppers, but size and shape very greatly.  I usually try to overfill the first few and...

    how "hot" are ABT's?

Yes, I cook the sausage with the onions garlic and mushrooms.  While it is still warm, not hot add the cream cheese and parmesan.  This is the recipe I used before I got the smoker, and I would add some bacon, they were always a hit, about 20 minutes in the oven at 400 degrees.  But if smoking...

    how "hot" are ABT's?

I recently read that the pointier the chili the hotter it is.  Seems to make sense, but I haven't had a chance to really put it to the test. Oh, and I like my ABT's a little meatier. 1lb. sausage 8oz. cream cheese 4oz. grated parmesan Above is the base recipe, I add chopped onions garlic...

eye of round steaks are terrible, help please

Did the steaks contain a % of solution?  The pinkish grey comment lends me to think that that may be part of the problem.  I stopped buying beef from Walmart because of that.  I found that no matter what you did with the meat, it all had the same consistency, and even cooked rare, had the...

    MES Smoke Stack?

I have a 40' mes and I use a 4" PVC elbow.  After bending the adjusting the vent adjuster up, it fits over the vent and can be aimed away from any drafts.  I have the top vent version, and it seems to work just fine.

    Where to buy meat?

I am not sure if it helps, but I have seen the truck from one of the big local BBQ restaurants around here picking up large quantities of meat from Costco.  I have always had good success with meat from the warehouse stores.

    Pinball

When I was in High School in the 70's 2 or 3 of us would go to the drug store and play Captain Fantastic all lunch hour on one quarter and always leave with about 20 free games on the machine.  We had the machine's timing and action down.  We could all bridge, trap and backflip, and we would all...

    Theoretical Moonshine question

Virginia ABC stores sell moonshine.  In fact when I first moved here 20+ years ago, I bought a bottle.  It was completely undrinkable.  There was nothing you could cut it with to make it palatable, and I use to dare people to try it.  On the other hand I have had some of the "not sold by the...

    MES40 heat question

There is no minimum temperature needed for them to work.  I got 10 hour of smoke out of my AMNPS with it unplugged with an outside temperature of 40 degrees.  It is all about the air flow.  My first few smokes were outside and a little windy and I had no problems.  The one time I used it under...

    amazn pellet smoker revisited

I also have a 40" MES and have used the AMNPS without a hitch.  Be sure to pull the chip loader out about an inch and a half, this will get the air flow that you need.  Leave the vent wide open and I put a 3" PVC elbow over it to help with the draw.  A soup can with both ends cut off would...

    MES 30 129$

I put mine there as well.  Pull the chip feeder out about 1 1/2" and leave the vent wide open.  I added a 3" PVC elbow on top of the vent to help with the draw.  Works like a charm.

    Persimmons

When I was a kid, my mom use to make persimmon cookies.  Just one word.  DON'T

I like long walks on the beach and candlelight dinners.

But. . . . Who doesn't? I just ordered a MES 40 from Amazon (will be delivered tomorrow) and an AMNPS so it looks like I will be smoking more and hanging out here more as well. I have been grilling for years as my 30 year old Webber kettle can attest.  I have some smoking under my belt, but...
