nice butt I got from my local meat guy. I dry rub it last night. This morning on tube smoker. going to move tyne apple juice closer to the heat. -

I did a wet brine over night with brown sugar and kosher salt. I kept the temperature around 180 for a few hours . I then I brought the temperature up to 250 until the bird was at 165. I have a masterbuilt propane. -
