Did 5 racks of spares on the smoker this weekend. Used a modified 3-2-1 method (3-1.5-1) at a consistent 225 degrees. I also adopted some of Mr. Johnny Trigg's recipe and added some of my own flare. Great bite, bone cleaned up nice, smoke ring showed up to the party and it had a nice sweet flavor with a good kick on the backside. Ribs have always been my nemesis. I think I got it this time.
