Hello Smoking Meat Forums, I see several great topics and comments from others who share similar BBQ interests as myself. A little info about Big Iron BBQ: I use a Southern Yankee routissery smoker. It is mounted on a 26' car hauler trailer. My preferences of wood are pecan and oak. I offer a Texas laid back style catering. I can handle up to 275 lbs of meat, which I've only done a couple of times. That's a lot of work! You may also see me at a festival here in Texas on occasion as well. Happy smoking!
