Pork tenderloin stacked with fresh pineapple, Allspice and a Mae Ploy Bourbon sauce. Done low and slow in the Kamado . Smoked in Cherry wood.

Turned out well. It's a fun toy. A vertical shishkabob that catches the drippings for pan liquor. Noticed a difference in the IT depending on where the meat was in the stack so I went to a lower longer cooking temp. So far I've only screwed up once with it. :)
