Got a 3 pack of spares from RD, $1.59/lb. Really nice looking racks. Just enough fat.
I took them out of the cryo, rinsed them with cold water and vinegar, then removed the membrane. TGrimmed em up, Rubbed them with yellow mustard then 3 different variations of my rub. Put them on the rib rack on the lower rack of the WSM, filled the top rack with skirt, and tips. Left the WSM alone for 2.5 hours, then pulled the skirt, and used the Jim Beam tart wash for the ribs and tips. Tips will come off in 30 minutes, spares probably about 2 hours after that.

Just cracked the firts PBR tallboy, and had my first shot of Jim Beam
