Thos would go good with some cajun boild pnuts.The texture is great and you can see the moisture. I'd better not keep these around too long.

It does look good, Now that you have tasted it how do you think the ECA mixed with it would have turned out like? Trying to imagine what I may have tried with that tang. Only thing I can think of would be the dry cured stix you can get anywhere ... Just wondering.
My first post what a great site . I just wanted to comment on your sausage stuffer I was using plastic bulldog clamps to hold my S S until I saw a pix using 3" suction cups can`t remember where but I found them on AMAZON I believe they are the same ones that are on the french fry maker it worked better for me HTH
Charlie they look great I used it a few times,my soul surviving friend can't do any dairy and he was able to eat them.Points for trying something different.
