I was moving a little slow this morning. Got everything lined out and drying casings starting @9am. Started rolling smoke @10am..
Round #3 hit INT 136*F @4pm just a while ago. Will pull them @5:30pm and into cool water bath. Then move back onto the smoke poles to bloom. Pics. when this round is done in an hour and a half....
Thats an impressive operation and the sausage looks amazing. I've made it a goal to do my own processing this coming fall, the more I see of you guys making sausage the more interested I become in giving it a try.
