PRIME Tri tip, reverse sear

That looks great Al. I seen a store here had them a few weeks ago. I need to see if they still have them. Not easy to get in the northeast

Here is what I started with.

We liked the marinade we put on the skirt steak we had last week, so I just made the same for the TT. I just eyeballed the ingredients, no measuring.

Into the vacuum canister for an overnight nap in the fridge.

When the TT hit 115 IT, we fired up the gasser. Cooked some potato’s on the side burner.

Judy took the leftover marinade & boiled it down for some Au Jus.

Love these sear grates, they came with the RT, but they seem more suited for the gasser.

Looks tasty to me! Done just how I’d want it and the sear is perfect.

Great job, Al with a beautiful TT. Curious, what was your internal temp when finished cooking?

Guess I'm going to have to get serious and give WFF a try. I did do an online order from WFF a little over a year ago, which I was pleased with, but never followed up. We've been lucky for many years with a couple excellent butchers very close to home. One retired 4 years ago, but the other is still going strong. My wife particularly favors the remaining butcher, which is excellent, with prices to match, but I think her attraction is the elderly Italian owner who has been flirting with her for years.

In the past year and a half, WFF has opened 6 stores in my general area, with the nearest being about a 30 minute ride. Think I'll give that store a visit next week.

I never checked the IT when done, only while in the smoker. The closest WFF is about 2 hours away. But with free overnight shipping it doesn’t matter. Although I would like to just go thru their store.

I started doing them on occasion a few years ago and I even have a Santa Maria set up for my weber kettle. It’s fun to do that on occasion using oak.

I have never marinated my tri-tips, but now that I see your excellent results, I may have to give it a shot. And I love the idea of cooking down the marinade for a sauce. Absolutely superb.

I do not have a RT however I have a heavily modified old Traeger. I must say the pellet pooper is very convenient.

Looks awesome Al - I’m ready for kids to get back in school so I can smoke or for that matter just grill something! Every time I plan a smoke boom kids happen!
