Got a recipe coming from a sweet gal that works in my Chiroprators office that is a dry style pepperoni but doesn't use the bacterias or fermenters. It uses tenderquick and citric acid. I believe she said it came from Rydek book.


Also got some 4.5" and 6" casings coming ....
 
cool....must post that when you get it......after all we are both still waiting for ryteks newest release to be.....released.....uggggghhhh april 28th.........

Dang still over a month! I hope The Ingrediant Store doesn't forget me by then 4.5 months Sheesh!

He died? Maybe that's why it's taking so long to sell the new book. Hope it wasn't from the salami ...
