Over the past few years, we have tried to think of ways to honor our son. In 2013 he lost his battle with PTSD. Our son was 23 yrs young. He was a United States Marine.
Last year we started a fundraiser for the local Marine Corp League. In our first year we raised $550.00.
This year we started a week early hoping to not have to smoke pork in back to back runs. On the 21-22 we did two runs of smoked pork. To meet our orders, I starting at 4am on the 27th, we did 3 straight runs of smoked pork. Over 36hrs smoking, pulling and vac packing. We smoked around 425lbs of pork. I can smoke up to 14 butts, but to make things go smoother we only did 10 at a time. 2 per rack.
All funds are not in just yet, but to date, in our second year, we have raised close to a $1000.00 for the local Marine Corp League. The Marine Corp League was a huge part of our sons funeral.
I am so grateful for those who have served and are no longer with us. These men and women are MY heroes!!

Our first run. Put the extra one in the first run. Trimmed and rubbed down with Jeff's rub and a few spices I add to make it even better.

Edit: Finally got my phone to cough up a few more pictures that our son took.
We foil at 160F. When the bottom two racks go into foil we rotate. From that point everything finishes at the same time.
Trimmed fat will go into the freezer for sausage.
The wife loves our smoked products. I do my best to keep the mess out of the kitchen.
