I come from the great state of Michigan. We have four seasons here in Michigan and I roll smoke in all four of those seasons.

I have a UDS that is my baby...I love her.

I also have an offset...that I love...but not at much as my UDS.

I also have a boat trailer and a couple 250 gallon fuel oil tanks that I hope to fashion into a mean green smoking machine.

I look forward to figuring out how this whole forum thing works and getting some valuable information from those who have come before me.

Such a great resource SMF has proven to be for myself. The wealth of knowledge that’s here and continues to join daily is why I’m here and continue to return. The pron sites are losing money on me now, I tell ya!

Geebs,

I cook the noodles on the stove....but not 100% done because the noodles will cook more on the smoker. I make my home made cheese sauce, mix them together while they are both still hot. I toss some extra shredded cheese on the top and throw it on my smoker for about 45 minutes...give or take...I got by look as much as anything...but usually ends up being about 45 minutes.

I got my base cheese sauce from Malcom Reed from "How To BBQ Right". I love his You Tube channel!! I took his recipe and tweaked it a little bit to my taste.
