Howdee Duff.... This is the Howdee-Do page, its where the Guru's that's the folks with either a Moderator or a OTBS (Order of the Thin Blue Smoke) tag come and help you with a smooth transition in the boards. BUT were I looking for an initial place to start, I start withe the search engine. Its bustin apoart at the seams with good stuff. Be specific too. Try looking for your particular smoker and what folks have to say. Its a good start.
Then when you decide what you want to cook next, research it. Look especially in the search engine for tutorials with Q-View, man these are the berries for learning. Then if ya still have questions either ask your favorite Guru or start a discussion. Just do all this ahead of when you are going to cook.
MY biggest suggestion, get a pad, notebook, journal, cardex, whatever you can dedicate strictly to smoking, and take notes. The test will be how good your smoked food become. Write down what you cooked how it was preped, how long, what kind of wood, temperatures, brines, injections, cures, rubs, sauces, etc etc etc.... then after the cook, what you liked and didn't. Then come and research your didn'ts and see what you'd like to tweak next time. Kind of like a snipers kill book. In no time you'll have the neighbors offering to mow the yard and wash the truck for food.
Remember that smoking is about patience and NO Stress, its a rule, there is definitely no stress allowed.
Looking forward to seeing your achievements and hopefully you'll inspire others with your successes.
Have fun and enjoy the smoke.
