I live in Iowa and have been smoking for a few years with the smoker in my avatar as well as cooking on a large trailer grill.
After having some decent results on the smoker I recently entered a few competitions. As my smoker is too large to maneuver and as it is set up for propane it really wasn’t conducive to the competition scene so I have been trying to smoke meat with my grill. All though still good eat’n it isn’t helping me compete with the big boys and their toys. Not that I would win if I had their gear, but I enjoy competing and want to take this to the next level.
I used to work in a steel fabrication shop and have the ability to work metal well enough to get through most situations needed to build a smoker so I have decided to start gathering the tools, the space and a plan.
I am leaning toward the vertical smoker as that is what I’m used to but have heard/read some nice things about the RF horizontals so that’s where I’m at for now.
